Buffalo Cauliflower Bites
INGREDIENTS
3/4 cup Almond Flour
1 cup dairy free milk
1 head cauliflower
2 eggs
Salt and pepper
Buffalo Sauce
DIRECTIONS
First mix the almond flour, dairy-free milk, salt and pepper, and a dash of buffalo sauce together to create a marinade.
In a separate bowl crack and whisk your egg
Chop/Break your cauliflower into florets
First coat cauliflower pieces in egg then coat with marinade and air fry at 400 for 15 minutes turn them at least once in that process.
Next take them out and toss with 1/4 cup or more of buffalo sauce and put back in the air fryer for 5 minutes! Serve with celery, carrots, ranch/blue cheese.
The PERFECT SuperBowl Sunday Appetizer!
These are one of my FAVORITE dishes to make and they are sure to be a hit because they are the perfect SuperBowl Sunday appetizer! I prefer to make mine using my air fryer because honestly, everything comes out great in an air fryer. If you haven’t jumped on that bandwagon yet I promise you that is one you won’t regret! The air fryer I use is the Instant Pot Vortex Plus and it has a built-in rotisserie and is definitely my most used kitchen appliance. I will say that it is rather large so it sits on top of our counter plugged in but it is used daily because it has so many functionalities like reheating and broil and it’s great for cooking frozen foods too!
Ok back to the Buffalo Cauliflower Bites, they are so easy to make and you can use whatever flour you want and whatever milk you want, I prefer to use unsweetened coconut milk or cashew milk, and then I use almond flour to keep it gluten/grain-free. One of my favorite brands of buffalo sauce is The New Primal but I also love Frank’s too! I think one thing that makes this recipe so great is that it has a bit of the buffalo sauce in the batter so it really has a ton of flavor before you even toss the cauliflower in the buffalo sauce after the fact.

The egg plays an important role in this recipe as well because it helps the cauliflower get crispy on the outside in my opinion. You could try doing a flax egg potentially but I haven’t tried it so I can’t attest to how well it would work. If cooking these in the oven I do recommend that you broil at the end to get a crispier finish but watch them closely. Last but not least I need to know… are you serving these with ranch or bleu cheese? My husband is team bleu cheese and I am team ranch all the way so make sure if you make these to tag me and tell me which team you are on!
