Italian Pasta Salad
INGREDIENTS
1/4 cup red onion, diced
1/4 cup sundried tomatoes, diced
1/2 cup cucumber, diced
1/4 cup pepperoncini
1/2 cup spinach, chopped
Few pieces of Fresh basil
1 Tbsp Chopped parsley
Shaved Parmesan
Red pepper flakes
Salt and pepper
2 cups cooked Rotini
2 Tbsp or so of Italian dressing:
1 tsp dried oregano
1 tsp dried basil
1 tsp dried parsley
1 tsp garlic powder
1 tsp onion powder
¾ tsp salt
¼ tsp ground black pepper
¼-½ tsp crushed red pepper
1/2 cup extra virgin olive oil
Pinch of lemon juice
DIRECTIONS
SERVINGS: 3-4 PREP/COOK TIME: 10 MINUTES
Mix together the ingredients for the Italian Dressing first.
Cook your noodles and drain them.
Mix together remaining ingredients and then top with shaved parmesan.

The thing I love about pasta salad is that you can make SO many variations of it! Whether it’s cold, hot, creamy, oil-based, tangy, or spicy you really can’t go wrong. For this one, I love the added pepperoncini and shaved parmesan! I like to make my own Italian dressing because it’s so easy to make using ingredients you typically have already but if you are looking for a brand that uses simple ingredients I recommend Primal Kitchen which can be found in most major stores or online here.
For my noodles I decided to use Tolerant Foods Red Lentil Rotini, I am a big fan of this brand because the noodles have a good texture when they are cooked and flavor too. I also love Banza pasta if you are looking for a GF noodle. Feel free to add in your other favorite Italian ingredients too, I wish that I liked olives because I would add those, but I hate olives unfortunately so if you are a fan let me know how it tastes with those added!
