Cashew Alfredo
INGREDIENTS
1 cup cashews (soaked in water 4+ hours if you can)
3/4 cup filtered water
1/2 cup sliced onion
2 garlic cloves minced
1/4 teaspoon rosemary
1/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 tablespoon lemon juice
3 tablespoons nutritional yeast
1 tablespoon ghee or avocado oil
DIRECTIONS
SERVINGS: 2-3 PREP/COOK TIME: 10 MINUTES
To start you will heat a pan on medium heat with ghee or avocado oil. Once hot toss in your onions and let those simmer for a few minutes. After they have started to turn translucent and brown a little you can throw in your garlic. Let these sauté for about 2-3 more minutes then remove from heat.
Drain your cashews if you were soaking them and toss them into a high-speed blender with all of the ingredients including your caramelized onion and garlic. Blend on high for 30 seconds to a minute. You will develop a creamy sauce and once you see that it is ready! Combine all ingredients and serve over favorite noodles!

If you’ve known me for a while you probably know that I make a killer alfredo sauce, I’m talking with the heavy cream the parmesan and butter, REAL alfredo sauce. My husband married me for that sauce I joke often, but unfortunately these days dairy doesn’t always sit well with me so I needed to find an alternative STAT!

This cashew alfredo sauce has so much flavor thanks to the sauteing of the onions and garlic first. I know it seems like an extra step but I promise it makes a world of difference in the flavor. Feel free to play with the consistency if need be as well and add more water if you prefer the sauce to not be so thick. If you haven’t ever used Nutritional Yeast yet I highly recommend getting some because this is the perfect “parmesan” replacement for dishes. It has that nutty flavor you are wanting from cheese. I like to serve this over so many dishes, spaghetti squash, pasta, roasted veggies, and more!
