Shrimp Ceviche
INGREDIENTS
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1/2 cup cucumber, diced
1 firm but ripe avocado, diced
1 small tomato, diced
1/2 serrano or jalapeno pepper, diced
7-8 Jumbo Raw Shrimp (Knowseafood)
Salt and Pepper
1 cup lemon/lime juice mixture
DIRECTIONS
SERVINGS: 1-2 PREP/COOK TIME: 15-20 MINUTES
Cut the shrimp into 1-inch pieces and then combine with the lemon/lime juice and salt in a bowl for about 30 minutes up to a few hours in the fridge stirring once or twice.
Once shrimp is ready you will combine all the remaining ingredients and pour the shrimp mixture in with everything. Serve with chips or on a tostada.
Every time I make this dish I am transported right back to Mexico with these flavors!
I remember the first time I ever had Ceviche, I was maybe 18 years old and on a vacation with my mom in one of our favorite places Playa Del Carmen, Mexico. I remember the hotel was all-inclusive and had this lunch buffet (obviously pre-covid times here) that had the most wonderful ceviche. I was skeptical at first but WOW was it amazing. It was so light and refreshing but also creamy and spicy, I went back and refilled my plate about 4 times and could not get enough.
Fast forward to current times… I have been buying my seafood from Knowseafood for over a year now and I absolutely love this brand! The fish is so fresh and the fact that it’s sushi-grade and you know it was sustainably sourced is unbeatable. They have the most delicious shrimp that is so fresh and not fishy at all. I knew this would be the perfect brand to try my hand at making ceviche myself. The process involves “cooking” the fish through the citric acid from citrus juice and I was again skeptical on if I could really pull this off. I was so silly for thinking that because this dish was so easy to make, I was instantly transported back to Mexico.
