Chocolate Granola
INGREDIENTS
2 cups oats
1/2 cup walnuts and pumpkin seeds, combined
2 tablespoons coconut sugar
1/2 tablespoon ground cinnamon
1/4 cup cacao powder
1/4 cup peanut butter or nut butter
1/4 cup maple syrup
1/2 teaspoon vanilla extract
1/4 cup melted coconut oil
DIRECTIONS
Mix together dry ingredients
Mix together wet ingredients
Combine wet/dry ingredients
Bake at 325 for 30 minutes Stirring only 1 time through the process. Keep eye on it too in case it is finished before 30 minutes.
Optional - Let cool and mix in dairy free chocolate chips
The perfect addition to breakfast OR dessert!
Smoothie bowls are one of my favorite things to make for breakfast and the perfect smoothie bowl is not complete without a little bit of crunch! That is where this chocolate granola came into play! I was craving chocolate-covered strawberries for breakfast and knew I could make a strawberry smoothie and that chocolate granola would be the perfect addition to breakfast or dessert!
Make sure to keep an eye on this in the oven because it can turn burnt quickly. Also depending on the texture, you like will depend on how much you break up the granola in the beginning. I like mine to be more fall apart than big chunks so I broke some of the pieces off early on. If you prefer bigger chunks of granola then don’t mess with the mixture after you spread it out on the baking sheet, let it cook in one big section essentially then once it cools you can break it up some. It lasts for weeks in a sealed container and is the perfect snack to get you through the day!
